Sun Of A Breakfast Sandwich
The bright flavor of Sun Of A perfectly complements the savory proteins in this scrumptious breakfast sandwich!
Ingredients
- 4 oz roast beef 
- 3 large eggs 
- 1 tsp butter, softened 
- 2 ciabatta rolls, split 
- 2 slices provolone cheese 
- Sun Of A to taste 
- Everything bagel seasoning (optional) 
Instructions
- Beat eggs thoroughly, mix in softened butter, and beat again. Let set for 10 minutes. 
- Spray two skillets with non-stick spray, and heat over medium until warm. 
- Toast ciabatta rolls and set aside. 
- Sauté roast beef in one skillet until browned and slightly crispy, put half on each ciabatta roll. Top each with a slice of provolone. 
- Scramble eggs slowly, folding constantly. When they are almost entirely cooked, with just a bit still liquid, form them into one large pile, cover, and remove from the burner. Let them sit for a minute. Cut the pile in two, and place half on each sandwich. 
- Top with a healthy dose of Sun Of A, and a sprinkle of Everything Seasoning, if desired. 
- Serve with hashbrowns or fruit. 
Recipe Notes
- This recipe works best with beef, and is especially good with chopped steak, but any breakfast meat will do.
