Tot Sauce Chicken Tacos
Healthy, delicious tacos without the spice? Sounds like a winner to us.
Ingredients
- 2 pounds boneless, skinless chicken breast 
- 2 tbsp vegetable oil 
- Salt and pepper, to taste 
- One 14.5oz can diced tomatoes 
- 1/4 cup Tot Sauce 
- 2 tbsp paprika 
- 2 tsp cumin 
- 1 tsp oregano 
- 1 tsp ancho or other chile powder (optional) 
- 12 taco shells 
Optional Toppings
- Diced lettuce 
- Diced jalapenos 
- Red onion 
- Sour cream 
- Cheese 
- Any Quarantine Project hot sauce! 
Instructions
- Preheat oven to 325. 
- Pound chicken flat, dust each side with salt and pepper. 
- Heat oil in a large stock pot over medium high, add chicken. 
- Cook until both sides are browned, remove chicken to a cutting board. 
- Pour tomatoes, hot sauce, and all spice into pan, bring to a simmer over medium. 
- Dice chicken and add to pan. 
- Cook chicken and tomatoes over medium until most of the liquid has evaporated (about 15 minutes) 
- Put taco shells in oven on a baking sheet, remove after 6 minutes. 
- Spoon chicken into taco shells, top with your favorite toppings!
